Lets start with why, a coworker of mine gave me a box of these amazing chocolate oats. Yes - CHOCOLATE OATS. I instantly knew I was making cookies with them, I just didn't know what recipe I was going to follow.. Should I pinterest " chocolate oat cookies " and make the best looking one that pops up? Should I make up my own? But I only have ONE box... if I wung it and it was a flop ( bc every home baker knows theres at least 4 hard flops before you perfect a recipe ) I wasn't going to have another opportunity! Well GUESS WHAT! I wung it, and I didn't flop. I browned that butter and folded them oats like I never have before and I created...

                  BROWN BUTTER Chocolate Oat TOFFEE Cookies

I started with my Oatmeal Toffee Cookie Recipe, and I tweaked the ever loving shit out of it.  I added the browned butter vs NOT browned butter because the original recipe calls for cinnamon and I didn't think cinnamon would do these cookies any good. BUT with out it, it would be missing that warm homey flavor. If you have never had brown butter before you definitely have been missing out. I'll make it relatable to all the Mammas out there, you know how the best smell in the world is your newborn babies head - you can't help but every time you pick the kid up you just uncontrollably sniff its head. To a knower of brown butter this is the equivalent, The smell is heavenly and your body instantaneously starts inhaling. I am shocked I was able to make it through with out a collapsed lung.

In addition to the brown butter I also substituted some of the flour with coco powder, and added in some dark chocolate chips - NO one wants to bite into a CHOCOLATE cookie and not taste CHOCOLATE. 

Unfortunately shortly after making these cookies I learned that the company who made these Chocolate oats no longer makes them 😢 Old fashion oats can be used in place of the Chocolate oats.
